Bruschetta with smoked salmon loin

Treat your guests to a little italianità: bruschetta with smoked salmon loin and mango salad is a welcome addition at any brunch.

Bruschetta featuring Organic Ingredients (for approx. 7 servings):

1 baguette
Olive oil

30 g mango
10 g red onions, finely sliced
60 g Mövenpick Organic Smoked Salmon Loin
2 tbsp olive oil
1 tbsp lemon juice
2-3 leaves coriander, chopped
A little ginger, finely chopped
A little grated lemon or lime rind
Salt, pepper

Method:

Cut the baguette (or bread of your choice) into slices, brush with a little olive oil and bake in an oven preheated to 180°C until light brown. Allow to cool.

Peel the mango and cut into cubes. Create fine slices out of the Mövenpick Organic Smoked Salmon Loin. Mix the olive oil with the lemon juice and add the mango cubes, onion rings, chopped coriander and ginger. Add a little grated lemon or lime rind and season to taste with salt and pepper.

Just before serving, mix the salmon with the dressing and mango cubes and place on the toasted bread slices.
