Smoked salmon in filo baskets

Impress your dinner guests with this simple recipe. A tasty prelude to a wonderful meal in good company.

Ingredients (for approx. 4 servings):

Baskets:
1 packet of filo or strudel pastry
approx. 30 g butter, melted

Avocado cream:
1 avocado
2-3 tbsp crème fraîche
Salt, pepper, chilli, cumin
Tabasco
1 tbsp lemon juice
2-3 leaves coriander, finely sliced

Salmon:
approx. 120 g Mövenpick Icelandic Smoked Salmon
1 tsp crème fraîche

Decoration:
Capers
Lettuce

Method:

Baskets:
Cut the filo or strudel pastry into squares approx. 11 x 11 cm. As a starter, count 1 basket per person. Brush each square with melted butter and place 3 layers on top of each other, slightly offset to create a star effect. Place in muffin tins and bake at 180°C for about 3-4 minutes until golden brown. Allow to cool.

Avocado cream:
Peel the avocado and cut into pieces. Puree finely with the crème fraîche and season with the spices and a little lemon juice. Add the Tabasco to taste. Finally add the cut coriander and season to taste again.

Salmon:
Place the cooled baskets on a plate and garnish with a little salad. Place one tablespoon of the avocado cream in each basket and cover with the salmon. Garnish with one teaspoon of crème fraîche and capers.

Tip: the filled baskets also make a great aperitif, in which case halve the size of the pastry squares and bake in mini muffin tins.
